We only sell dry cured gammons using a traditional dry-cure process that involves taking the meat and rubbing it, over a number of days, with our special recipe dry salt mix. It is then stored in our fridges over a number of weeks for the moisture to be drawn out; this also leaves the gammon with a more natural and traditional color. The traditional color is only a by product of why we cure our gammon this way, the true benefit is the taste. Our curing process is solely aimed at producing a gammon that is extremely tender and succulent with a taste that has long been forgotten.
